Dried Cherry and Apple Chutney.     

Ingredients: 

Vegetable Oil-1tablespoon.
Red Onion-1 cup chopped. 
Fresh Ginger-1 tablespoon finely chopped. 
Red Pepper Flakes- 1/4 teaspoon. 
Dried Cherries- 1/3 cup. 
Brown Sugar-1 tablespoon. 
Salt- 1/4 teaspoon. 
Water- 3/4 cup. 
Green Apple-1 large cored and finely chopped. 
Cornstarch- 3/4 teaspoon. 
Balsamic Vinegar-1 teaspoon.                        

Instructions:  Heat the vegetable oil in a large skillet on a medium flame.   Add the onion, ginger and red pepper flakes.  Sautee for 5 minutes. 

Add to the pan the dried cherries, brown sugar and salt.  Stir until well incorporated.  Stir in the water and cook covered for another 5 minutes.  Add the chopped apple and cover.  Continue cooking for 7 minutes until the apple begins to soften. 

Mix the cornstarch with a few teaspoons of water until dissolved.  Add the cornstarch mixture to the pan and stir the mixture until coated and slightly thickened.  Remove from the flame and stir in the balsamic vinegar.  Allow to cool and refrigerate.
