Cumin Crusted Roast Chicken

Our viewers unanimously agree that chicken is their favorite entree.  So here is a recipe with a short tale. 

I was touring and house for sale here in lovely South Florida.  The owner hosted the tour in Spanish, the type spoken 95 miles per hour.  She was short and skinny but her most outstanding features were an eye patch and a head brace.   Oh! did I forget to mention the house dress that was about to fall off her shoulders. 

Don't ask!  You just had to be there. 

She was very animated throughout the entire tour with her high pitched voice.   When we finally finished looking at this concoction of a 6000 square foot house I let out  a laugh.  All of a sudden everyone started hysterically laughing.  We had a fun time. 

So you ask what's the point of this story.  Well, this woman had something cooking when we were there and I could not get over the smell.  It was like a religious experience for me.  I asked her what it was and she simply said "chicken".  I didn't want to twist her arm as it looked like she had enough wrong with her, but I simply had to get the recipe! 

As luck would have it, she followed me out of her house to my friends car and spent an hour explaining the recipe to me.  At deliciouscookies.com we would  like to share this secret recipe with you.  Thank you to the Funny Spanish Lady.                

Ingredients: 
Chicken-1 large roaster. 
Oregano-1 teaspoon. 
Kosher Salt-2 teaspoons. 
Cumin-1 1/2 tablespoons. 
Olive oil-2 tablespoons. 
Lemon-1 whole. 
White wine- 1/2 bottle.                               

Instructions: 
Clean the chicken and pat dry.  Salt the cavity with 1 teaspoon of the salt and "just shove it up there", the entire lemon in the middle.  Place the chicken in to a roasting pan.  Brush the olive oil all over the chicken.  Season with the oregano, salt and cumin.  Pour wine into the bottom of the pan.  Cover the pan with aluminum foil tightly.  Bake in a preheated 350F. oven for about 1 1/2 hours. 

Remove foil and baste.  Cook uncovered for another 30 minutes to crisp.  Broil for a few minutes at the end for even more crispiness.  Serve with a warm homemade tomato - pepper chunky salsa.
