Pikelets

3 oz All purpose flour
1 oz Whole wheat
4 oz Bread flour
1/4 oz yeast
1 teasp. sugar
1/2 pint warm milk and water
1Tablesp oil
1/2 teasp. bicarb
1/4pt warm water

Sift the flours and salt in a warm bowl, cream yeast with sugar add warm milk and water then the oil, stir into a well made in the flour, to make batter beat really vigorously until smooth. cover bowl until the mixture rises and surface is full of bubbles. Break it down with a wooden spoon, cover and leave for 30 ins.

Just before you're ready to cook, add the bi-carb with 1/4 warm water and stir into the batter. This is vital for big bubbles! Grease a griddle or bake stone and use cooking rings. Pour batter into rings about 1/2 inch up and cook for 5-7 mins, flip and cook for 3 minutes.
