Potato pancakes
This is for one person
1 large potato peeled, washed and put in cold water
1 small finely chopped onion
1 small egg, beaten
about 1 Tbsp flour
salt and pepper to taste
Instructions
dry the potato and grate it on a fine cheese or potato grater ( for a
bigger quantity you are better of using the food processor)
add onion, egg, salt and pepper and mix. Stir in the flour to bind the
water.
Heat a little vegetable oil in a frying pan
spoon small portions of the mixture into the hot oil and flatten them with
the back of the spoon.
Fry for about 3 minutes or until golden brown on each side.
Serve with apple sauce or ketchup.
