Steak with Stilton and Watercress Sauce
Serves: 2

Cooking Time Detail: BEEF GRILLING/FRYING STEAKS (timings below are for each side)
Sirloin or rump steaks
2cm (3 /4")
2 1 /2 minutes (Rare)
4 minutes (Medium)
6 minutes (Well Done)
(fillet steaks are approximately 1cm ( 1 /2") thicker, so will need an extra 1-2 minutes cooking time each side)

Topside or frying
2-3mm ( 1 /8")
2 minutes

PORK GRILLING/FRYING STEAKS/CHOPS (timings below are for each side)

Loin or leg steaks
1-2cm (1 /2 - 3 /4")
6-8 minutes

Chops
2-3cm (3 /4 - 1 1/4")
8-10 minutes

LAMB GRILLING/FRYING STEAKS/CHOPS (timings below are for each side)

Leg, chump steaks
1-2cm (1 /2 - 3 /4")
4-6 minutes

Chops
2cm (3 /4")
6-8 minutes

Cutlets
2cm (3 /4")
4-6 minutes
 

Ingredients:

15ml (1tbsp) oil
2 lean beef, lamb or pork grilling/frying steaks
45ml (3tbsp) half fat crème fraîche
50g (2oz) Stilton cheese
25g (1oz) watercress
 

Overall Preparation Time: 20 minutes

Method:

In a non-stick frying pan, the oil and fry 2 x lean beef, lamb or pork grilling/frying steaks (see cooking times).
Remove from the pan and keep warm.

Add to the pan: the half fat crème fraîche, the Stilton cheese, crumbled.
Heat gently for 1 minute. Stir through the watercress, roughly chopped, until wilted.
 

Serving Suggestion:

Serve steaks with sauce of your choice, crispy oven baked chips and onions, microwave cook new potatoes, or pre-prepared mash potato and vegetables.
